- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap the beets in aluminum foil and roast on a baking sheet for 45-60 minutes until tender.
- Let the beets cool slightly, then peel under running water to remove skin.
- While cooling, peel and slice the oranges into rounds or segments.
- In a large bowl, combine mixed greens, orange slices, crumbled feta, and chopped pecans. Drizzle with olive oil and balsamic vinegar; season with salt and pepper.
- Slice the cooled beets into wedges and gently fold them into the salad mixture.
