  • 2 cups fresh spinach
  • 1 cup crumbled feta cheese
  • 3 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • ¼ cup toasted pine nuts
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Gather tools: cutting board, knife, mixing bowl, and baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant (about 1 minute), then add fresh spinach until wilted.
  3. In a mixing bowl, combine sautéed spinach with crumbled feta, dried herbs, and pine nuts.
  4. Lay turkey breast flat on the cutting board and pound it to about ½ inch thick.
  5. Spread the filling evenly over the turkey breast and roll tightly from one end like a burrito.
  6. Place seam-side down in a baking dish, drizzle with olive oil, season with salt and pepper. Bake for 45-50 minutes or until cooked through.
