Ingredients

Scale
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 (8 oz) packages Philadelphia cream cheese, softened
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (160°C). Grease an 8-inch square baking pan or line it with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined. Press this mixture firmly into the prepared pan.
  3. In another bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix until combined. Then add sour cream and vanilla extract, blending until smooth.
  4. Add eggs one at a time on low speed, mixing just until incorporated.
  5. Pour the cream cheese mixture over the crust and bake for about 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before refrigerating for at least 4 hours or overnight. Slice into squares and serve.
