  • 3 medium sweet potatoes (about 2 lbs), peeled and thinly sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup grated sharp cheddar cheese
  • 1 tsp kosher salt
  • ½ tsp freshly cracked black pepper
  • ¼ tsp ground nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together heavy cream, minced garlic, salt, pepper, and nutmeg.
  3. In a greased baking dish, layer half of the sweet potato slices evenly at the bottom. Pour half of the cream mixture over them and sprinkle half of the cheddar cheese on top.
  4. Repeat with another layer of sweet potatoes, followed by the remaining cream mixture and cheddar cheese.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake uncovered for an additional 20-25 minutes until golden brown and bubbly.
  6. Let rest for about 10 minutes before serving.
