Ingredients

  • 4 medium sweet potatoes
  • 4 tablespoons unsalted butter
  • 1/2 cup sour cream
  • 1 cup shredded sharp cheddar cheese
  • 3 green onions, chopped
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Bake whole sweet potatoes on a parchment-lined baking sheet for 45-60 minutes until tender.
  3. Allow to cool slightly, then slice in half lengthwise and scoop out the insides into a bowl.
  4. Mix the scooped flesh with butter, sour cream, cheddar cheese, green onions, salt, pepper, and paprika until creamy.
  5. Spoon the mixture back into the potato skins.
  6. Bake at 375°F (190°C) for 20-25 minutes until heated through and golden on top.
