  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium fresh pineapple (cut into chunks)
  • 1 cup teriyaki sauce
  • 2 bell peppers (any color, sliced)
  • 4 green onions (chopped)
  • 1 tsp garlic powder
  • Salt & pepper to taste

Instructions

  1. Preheat grill to medium heat (350°F) or oven to 400°F (200°C).
  2. Cut chicken into bite-sized pieces and pineapple into chunks.
  3. In a mixing bowl, combine chicken, teriyaki sauce, garlic powder, salt, and pepper; mix well.
  4. Lay out aluminum foil sheets. Place equal portions of the chicken mixture on each sheet; top with pineapple and bell peppers.
  5. Fold foil tightly to create sealed packets.
  6. Grill packets for 20-25 minutes or bake in the oven for 25-30 minutes. Flip halfway through cooking.
