Ingredients

  • 1 scoop (30g) protein powder (vanilla recommended)
  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 tsp baking powder
  • 2 large eggs
  • 1/2 cup milk (or dairy alternative)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the rolled oats, protein powder, baking powder, and a pinch of salt.
  3. In a separate bowl, whisk together Greek yogurt, honey or maple syrup, eggs, and milk.
  4. Combine wet ingredients with dry ingredients; mix until just combined (lumpy is okay).
  5. Gently fold in blueberries.
  6. Grease muffin tins or line with paper liners and fill each cup about three-quarters full.
  7. Bake for 18-20 minutes or until golden brown; check doneness with a toothpick.
  8. Allow to cool slightly before enjoying.
