- 1 scoop (30g) protein powder (vanilla recommended)
- 1 cup fresh blueberries (or frozen)
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 2 tsp baking powder
- 2 large eggs
- 1/2 cup milk (or dairy alternative)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the rolled oats, protein powder, baking powder, and a pinch of salt.
- In a separate bowl, whisk together Greek yogurt, honey or maple syrup, eggs, and milk.
- Combine wet ingredients with dry ingredients; mix until just combined (lumpy is okay).
- Gently fold in blueberries.
- Grease muffin tins or line with paper liners and fill each cup about three-quarters full.
- Bake for 18-20 minutes or until golden brown; check doneness with a toothpick.
