  • 2 medium carrots, diced
  • 1 cup bell peppers, diced (any color)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin seeds
  • 4 cups vegetable broth
  • Salt to taste
  • 2 tablespoons olive oil

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces and rinsing lentils until water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add diced onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic, ginger, carrots, and bell peppers. Add curry powder, turmeric, and cumin seeds; cook for another 3–4 minutes.
  4. Add rinsed lentils, coconut milk, and vegetable broth to the pot. Bring to a gentle boil while stirring occasionally.
  5. Reduce heat to low, cover the pot, and let it simmer for about 30 minutes or until lentils are tender. Stir occasionally to prevent sticking.
