  • 1 packet taco seasoning

  • 1 cup shredded cheddar cheese
  • 1 cup salsa

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the seeds gently.
  2. In a skillet, cook ground turkey over medium heat until browned, about 5-7 minutes.
  3. Stir in taco seasoning, drained black beans, and half of the salsa; heat through for about 3 minutes.
  4. Generously stuff each zucchini half with the turkey mixture, then top with shredded cheese.
  5. Place stuffed zucchinis on a parchment-lined baking sheet and bake for 20-25 minutes until tender.
