Description

Cranberry Balsamic Roast Beef is a savory dish featuring tender beef infused with sweet cranberries and tangy balsamic vinegar, perfect for memorable family gatherings.

Ingredients

Scale
  • 34 lb beef roast (chuck or brisket)
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/2 cup balsamic vinegar
  • 2 sprigs fresh rosemary
  • 4 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C). Season the beef roast generously with salt and pepper.
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the roast for 3-4 minutes on each side until browned.
  3. In a bowl, mix together cranberry sauce, balsamic vinegar, minced garlic, and rosemary until smooth.
  4. Pour the sauce over the seared roast in the skillet, coating it thoroughly.
  5. Transfer the skillet to the oven and roast uncovered for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  6. Allow the roast to rest for 10-15 minutes before slicing. Serve with drizzled sauce.
