- 1/2 cup balsamic vinegar

- 4 garlic cloves, minced

- Salt and pepper to taste
Instructions
- Preheat oven to 325°F (165°C). Season the beef roast generously with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the roast for 3-4 minutes on each side until browned.
- In a bowl, mix together cranberry sauce, balsamic vinegar, minced garlic, and rosemary until smooth.
- Pour the sauce over the seared roast in the skillet, coating it thoroughly.
- Transfer the skillet to the oven and roast uncovered for about 1 hour, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Allow the roast to rest for 10-15 minutes before slicing. Serve with drizzled sauce.
