  • 1/2 cup unsalted butter (softened)

  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 cup nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth but slightly chunky.
  3. In another bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry mixture to the wet mixture, stirring just until combined. Fold in nuts or chocolate chips if desired.
  7. Drop heaping tablespoons of dough onto prepared baking sheets, leaving space between each scoop.
