Description

  • 2 cups fresh broccoli florets, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • Olive oil spray

Instructions

  1. Preheat oven to 400°F (200°C). Wash and chop the broccoli into small pieces.
  2. Blanch the broccoli in boiling salted water for 2-3 minutes until bright green. Drain and cool in cold water.
  3. In a bowl, combine blanched broccoli, cheddar cheese, panko breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until well combined.
  4. Form mixture into bite-sized balls and place on a parchment-lined baking sheet.
  5. Lightly spray each popper with olive oil and bake for 20-25 minutes until golden brown.
  6. Let cool slightly before serving with your preferred dipping sauce.
