- 2 cups fresh broccoli florets, chopped
- 1 cup sharp cheddar cheese, shredded
- 1 cup panko breadcrumbs
- 2 large eggs
- 1 tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper

Instructions
- Preheat oven to 400°F (200°C). Wash and chop the broccoli into small pieces.
- Blanch the broccoli in boiling salted water for 2-3 minutes until bright green. Drain and cool in cold water.
- In a bowl, combine blanched broccoli, cheddar cheese, panko breadcrumbs, eggs, garlic powder, salt, and pepper. Mix until well combined.
- Form mixture into bite-sized balls and place on a parchment-lined baking sheet.
- Lightly spray each popper with olive oil and bake for 20-25 minutes until golden brown.
- Let cool slightly before serving with your preferred dipping sauce.
