Ingredients

Scale
  • 2 cups canned white beans (cannellini or great northern), rinsed
  • 4 cups vegetable broth
  • 1 medium onion, finely chopped
  • 34 cloves garlic, minced
  • 2 tbsp extra virgin olive oil (for soup) + more for frying capers
  • 1/2 cup crispy capers (about 1/4 cup before frying)
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Chop onions and garlic.
  2. Sauté aromatics: In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add garlic and cook for another minute.
  3. Add beans and broth: Stir in the rinsed white beans and vegetable broth. Bring to a simmer and cook for about 15 minutes.
  4. Blend until creamy: Use an immersion blender to puree the soup until smooth. Adjust texture as desired.
  5. Add flavor boosters: Stir in lemon juice, fresh herbs, salt, and pepper to taste.
  6. Crisp the capers: In a small pan over medium heat, fry drained capers in olive oil until golden brown (about 3 minutes). Drain on paper towels.
  7. Serve hot: Ladle the soup into bowls and top with crispy capers.
