- 3–4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup long-grain white rice
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown, about 6-7 minutes per side.
- Remove the chicken from the skillet. Add minced garlic to the same skillet and sauté for 30 seconds.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
- Return the seared chicken to the skillet, then add the rice. Stir to coat the rice in the sauce.
- Cover with a lid or foil and bake in the preheated oven for 25-30 minutes.
- Let rest briefly before serving and garnish as desired.
