  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper and sear until golden brown, about 6-7 minutes per side.
  3. Remove the chicken from the skillet. Add minced garlic to the same skillet and sauté for 30 seconds.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  5. Return the seared chicken to the skillet, then add the rice. Stir to coat the rice in the sauce.
  6. Cover with a lid or foil and bake in the preheated oven for 25-30 minutes.
