Description

Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3 cloves fresh garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked preferred)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, sear the chicken for about 5 minutes per side until golden brown. Set aside.
  3. In the same skillet, sauté minced garlic until fragrant, then add chicken broth. Scrape any flavorful bits from the bottom.
  4. Stir in heavy cream, onion powder, and paprika; bring to a gentle simmer before returning the chicken to the pan.
  5. Sprinkle uncooked rice around the chicken and pour remaining sauce over it. Cover tightly with foil and bake for 25-30 minutes.
  6. Remove from oven, let cool slightly, garnish with parsley if desired, and serve warm.
