- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 3 cloves fresh garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon paprika (smoked preferred)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper. In a skillet over medium heat, sear the chicken for about 5 minutes per side until golden brown. Set aside.
- In the same skillet, sauté minced garlic until fragrant, then add chicken broth. Scrape any flavorful bits from the bottom.
- Stir in heavy cream, onion powder, and paprika; bring to a gentle simmer before returning the chicken to the pan.
- Sprinkle uncooked rice around the chicken and pour remaining sauce over it. Cover tightly with foil and bake for 25-30 minutes.
- Remove from oven, let cool slightly, garnish with parsley if desired, and serve warm.
