  • 1 cup sliced button mushrooms (approximately 70g)
  • 1 cup heavy cream (240ml)
  • 1 cup freshly grated Parmesan cheese (approximately 100g)
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Red pepper flakes for heat (optional)

Instructions

  1. Cook the fettuccine in a large pot of salted boiling water according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant, about 1 minute.
  3. Add sliced mushrooms and cook until tender, then stir in fresh spinach until wilted, approximately 3-4 minutes.
  4. Pour in heavy cream while stirring continuously; let it simmer for about 5 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted; add the drained pasta to the sauce, mixing well to coat. If needed, use reserved pasta water to adjust consistency.
  6. Season with salt, pepper, and optional red pepper flakes. Serve hot with additional cheese if desired.
