- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz penne pasta
- 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
- 8 oz button or cremini mushrooms, sliced
- 1 cup heavy cream
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Reserve 1 cup pasta water
Instructions
- Cook the penne pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, heat olive oil and sauté sliced chicken until golden brown and cooked through (7-10 minutes). Remove from skillet.
- In the same skillet, add more olive oil if needed. Sauté minced garlic for about 30 seconds, then add sliced mushrooms and asparagus. Cook until tender (about 5 minutes).
- Pour in heavy cream, stirring well while scraping up browned bits from the skillet. Add grated Parmesan and stir until melted.
- Return cooked chicken to the skillet along with drained penne. Toss everything together, adding reserved pasta water as needed for desired creaminess.
