  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz penne pasta
  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 8 oz button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Reserve 1 cup pasta water

Instructions

  1. Cook the penne pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and sauté sliced chicken until golden brown and cooked through (7-10 minutes). Remove from skillet.
  3. In the same skillet, add more olive oil if needed. Sauté minced garlic for about 30 seconds, then add sliced mushrooms and asparagus. Cook until tender (about 5 minutes).
  4. Pour in heavy cream, stirring well while scraping up browned bits from the skillet. Add grated Parmesan and stir until melted.
  5. Return cooked chicken to the skillet along with drained penne. Toss everything together, adding reserved pasta water as needed for desired creaminess.
