  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 1 stalk celery, chopped
  • 2 cans (15 oz each) canned chickpeas, drained and rinsed
  • 1 cup dried lentils (green or brown)
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups fresh spinach or kale
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion; sauté until translucent (about 5 minutes).
  2. Stir in minced garlic, chopped carrots, and celery; cook until softened (about 3-4 minutes).
  3. Add rinsed lentils and canned chickpeas; mix well.
  4. Pour in vegetable broth and diced tomatoes; bring to a boil then reduce heat to simmer for 25-30 minutes.
  5. Once lentils are tender, stir in fresh greens and season with cumin, paprika, salt, pepper, and lemon juice.
  6. Serve hot with crusty bread or over rice.
