  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep Your Vegetables: Wash and chop all vegetables into bite-sized pieces.

  3. Add Cabbage & Tomatoes: Stir in chopped cabbage and diced tomatoes (juice included). Cook until slightly wilted.
  4. Pour in Broth & Season: Add vegetable broth, bay leaf, and thyme. Bring to a gentle boil, then reduce heat to simmer.
  5. Simmer: Cover the pot and let simmer for about 30 minutes until veggies are tender.
  6. Taste & Adjust: Before serving, taste the soup and adjust salt and pepper as needed.
