  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (optional)
  • ½ cup fresh basil, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your vegetables: Dice the onion, carrots, and celery into bite-sized pieces.
  2. Sauté aromatics: In a large pot over medium heat, add olive oil and sauté the onions until translucent (about 5 minutes).

  4. Pour in broth & simmer: Add vegetable broth to cover ingredients by an inch. Bring to a boil then reduce heat; simmer for 45-50 minutes until rice is tender.
  5. Finishing touches: Stir in fresh basil during the last few minutes of cooking. If using cream, add just before serving.
