Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping garlic and sun-dried tomatoes.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken breasts with salt and pepper, then sear for 6-7 minutes on each side until golden brown.
  3. Add minced garlic to the skillet and sauté for about 30 seconds.
  4. Pour in heavy cream and add sun-dried tomatoes; stir and let simmer for about 5 minutes until slightly thickened.
  5. Stir in fresh spinach and Parmesan cheese until melted and well combined.
