  • 4 medium Yukon Gold potatoes (cubed)
  • 1 pound fully cooked sausage (Italian or smoked)
  • 1 packet (1 oz) ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • ¼ cup green onions (chopped)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Wash and cube the potatoes into 1-inch pieces.
  3. In a skillet over medium heat, brown the sausage until caramelized.
  4. In a large bowl, mix together cubed potatoes, cooked sausage, ranch dressing mix, sour cream, and half of the cheese.
