Ingredients

  • 2 cups parsnips, peeled and chopped
  • 2 cups carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 tbsp spirulina powder
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Prepare your veggies by washing, peeling, and chopping parsnips and carrots into uniform pieces.
  2. In a large pot over medium heat, sauté the onion and garlic in olive oil until golden brown (3-5 minutes).
  3. Add parsnips and carrots; season with salt and pepper. Sauté for another 5-7 minutes until slightly softened.
  4. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until veggies are tender (about 20 minutes).
  5. Blend the mixture until smooth using an immersion blender or regular blender.
  6. Return to heat; stir in spirulina powder and coconut milk. Adjust seasoning; add lemon juice before serving.
