Ingredients
- Rotini or penne pasta
- Fresh mozzarella balls
- Cherry tomatoes
- Cucumber
- Bell peppers (any color)
- Extra virgin olive oil
- Balsamic vinegar
- Italian seasoning
- Salt and pepper
Instructions
- 1. Cook pasta according to package directions until al dente. Drain and cool under cold water.
- 2. Chop cherry tomatoes, cucumber, and bell peppers into bite-sized pieces.
- 3. In a large bowl, combine cooled pasta, chopped veggies, and mozzarella balls; gently fold together.
- 4. Whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper in a small bowl. Pour over the pasta mixture and toss well.
- 5. Cover and refrigerate for at least 30 minutes before serving to meld flavors. Enjoy chilled!
